The same way you do it in any other app... you hold Ctrl and then  
press Z at the same time. It just doesn't do anything in rtorrent.

What do you want to do? Escape from rtorrent and run it in the  
background? For that you'll need to start it in screen or dtach. Read  
the man pages of those programs for more info.
